Blueberry Saddle Blankets (Pancakes) Recipe

Recently we had ‘breakfast for supper’ over at our friend “Medic’s” house.  He made up a batch of old fashioned blueberry pancakes...


... from scratch! 


We tried out our lefsa grill from cooking them.  It didn’t work so well.  The surface grabbed too much batter and they kinda of stuck.  But Medic worked it out and soon was making pancake after pancake.


They were SOOOOOO good! 



Blueberry Saddle Blankets

HISTORY: “Saddle blankets” and “splatter dabs” were two trail terms for pancakes or griddle cakes that remained in common use on ranches into this century.  Maple syrup may be synonymous with pancakes today, but early cowboys would have eaten these pancakes with sorghum molasses, honey, or cane syrup.


1 ½ cups all--purpose flour
½  teaspoon baking powder
½ teaspoon baking soda
Pinch of salt
¾ cup buttermilk
½ - ¾ cup milk
1 tablespoon honey
1 tablespoon butter, melted
¼ teaspoon vanilla extract
½ cup fresh blueberries
Vegetable oil for brushing
Butter and maple syrup, to serve

Stir together the flour, baking powder, baking soda, and salt in a large mixing bowl.  Make a well in the middle.

2. Beat together the buttermilk, ½ cup milk, honey, melted butter, and vanilla extract.  Pour the liquid ingredients into the dry ingredients and stir until just combined, adding a little extra milk if necessary.  Do not worry if small amounts of flour remain visible in the mixture.  Stir in the blueberries.

3. Place a large skillet or griddle with a nonstick surface over medium heat and very lightly brush with oil.  Drop the batter by spoonfuls on to the hot skillet or griddle and cook for about 45 seconds, until the edges of the pancakes look set and the top is filled with bubbles.
